Looking for a Coffee Enhancer? How About Some Cake?


Having a good cup of coffee in the morning, or really any time of day, just tastes a little better if there is something sweet to go along with it. Making coffee cake doesn’t require much time and the ingredients are often typical pantry items that are on hand.

One recipe includes a nut and streusel topping. The other is flavored with lemon. Each of them has an ingredient that helps keep the cake moist: sour cream in one, yogurt in the other.

Invite a friend over or enjoy the cake on your own. Either way, you won’t be sorry.

Streusel Coffee Cake

  • 2 eggs, beaten
  • 1 cup sugar
  • 1 cup milk
  • 6 tablespoons melted butter
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • For the streusel topping:
    • ½ cup brown sugar
    • 2 tablespoons flour
    • 2 teaspoons cinnamon
    • 2 tablespoons melted butter
    • ½ cup chopped pecans or walnuts

Mix the first six ingredients together well. Add next three ingredients and mix just until combined. Pour into a greased 9 inch by 13 inch pan. Sprinkle topping over the entire cake. Bake at 375 degrees for 30 minutes.

Lemon Coffee Cake

  • 1 cup Greek yogurt
  • 1 cup sugar
  • 3 eggs
  • 2 teaspoons grated lemon zest (2 lemons)
  • ½ cup vegetable oil
  • 1/3 cup lemon juice
  • 1½ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • Glaze:
    • 2/3 cup powdered sugar
    • 2 tablespoons lemon juice

Mix first six ingredients together well. Add the next three ingredients, mixing just until combined. Pour into a greased loaf pan and bake at 350 degrees for 45 to 50 minutes. Cool in the pan for 10 minutes then put on a wire rack for another 15 minutes. 

Mix glaze ingredients together and drizzle over the cake.
