Homemade Tacos and Tortilla Chips Make Dinner a Snap


Let’s face it: sometimes there aren’t enough hours in the day to get everything done. Trying to figure out how to get dinner on the table on a busy day can be challenging, especially when juggling work, school obligations, sports practices and other family activities. 

It’s your lucky day, especially if tacos sound good! Relying on a slow cooker can make things easy (and give you some extra minutes to focus on other things). It only takes three ingredients and the chicken turns out tender, flavorful and downright delicious.

It’s also nice to have tortilla chips and salsa to go with those tacos. If you don’t have a bag of chips handy in your pantry, it’s easy to make your own. They taste great and because they are baked, are a bit healthier.

Enjoy this quick dinner (and the time you’ve saved so you can focus on other things)!

Chicken Tacos

  • 3-4 boneless chicken breasts
  • Taco seasoning (1 packet if purchased, or homemade recipe is included below) 
  • ½ cup water
  • Tortillas or hard taco shells
  • Taco toppings (e.g., cheese, lettuce, onions, radishes, salsa, sour cream, avocado) 

Place chicken in  aslow cooker and sprinkle with taco seasoning. Drizzle water over the chicken. Cook on low for 4-6 hours. Shred the chicken with two forks and serve with your favorite taco toppings.

Homemade Taco Seasoning

  • 2 tsp. chili powder
  • 1 1/2 tsp. ground cumin
  • 1/2 tsp. paprika  
  • 1/2 tsp. crushed red pepper
  • 1/2 tsp. salt 
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/4 tsp. black pepper

Combine all the ingredients and use it with the chicken taco recipe.

Homemade Tortilla Chips

  • Flour tortillas
  • Vegetable oil
  • Salt

Preheat your oven to 350 degrees. Slice each tortilla into eight pieces/chips. Lay the pieces in a single layer in a baking dish, ensuring chips don’t overlap. Brush or spray both sides with oil and sprinkle with salt. Bake for 15-20 minutes, turning over once after 10 minutes (be careful not to burn). Serve with salsa and/or guacamole.
