New Breakfast Spot Brings All-Day Comfort Food to Chanhassen


There’s a new place in town for breakfast lovers – and the pancakes, coffee and cozy booths are already winning over locals.

Ruby’s, a breakfast and American food restaurant, quietly opened its doors about six weeks ago in Chanhassen. The restaurant offers a classic diner-style menu with all-day breakfast, daily hours from 7 a.m. to 9 p.m., and a welcoming atmosphere for everything from quick coffee breaks to larger gatherings.

Previously home to a Greek restaurant, the space was renovated and remodeled to suit Ruby’s vibe. Updates include brand new booths, expanded seating, and a fresh layout to accommodate up to 21 tables.

“We took about a month to remodel,” Manager Lorenzo Martinez shared. “The booths are all new, and we rearranged everything.”

The manager, a seasoned industry professional with 14 years of experience, was previously part of the Rey Azteca team and recently returned to Chanhassen after several years away.

“I’ve been in the restaurant world for a long time, and when I heard there was an opportunity to bring something new to Chanhassen, especially breakfast, I knew it was the right fit,” he said.

Ruby’s offers dine-in and takeout, with orders currently available by phone or through DoorDash.

The menu is filled with breakfast classics – fluffy pancakes, omelets, hearty skillets – as well as lunch and dinner staples. There’s also an extensive milkshake collection, an array of desserts, and enough options to keep customers coming back for something new each visit.

While it’s already attracting weekend crowds, the space has also become a base for community groups and casual meetings.

“Last Wednesday, we had a group of 20 people gather here,” Martinez said. Parties of six or more are encouraged to call ahead for reservations.
