Edible India Opens in Downtown Chaska


If you’re looking for a bite to eat that will warm you up on a chilly Minnesota day, some hot and spicy Indian food may just fit the bill.

You can find that at Edible India, which held its grand opening celebration on Jan. 17. The event was hosted by the SW Metro Chamber of Commerce with Chaska Mayor Taylor Hubbard presiding over her first ribbon-cutting ceremony as the city’s top official.

Edible India has a large menu of authentic, traditional Indian cuisine served in a quick-service model, “similar to Chipotle, but with Indian food,” says owner and Carver resident Yasin Abdul.

“I’m excited that Edible India has chosen downtown Chaska for their restaurant. Their delicious menu and local ownership are a perfect fit, enhancing the small-town charm that makes our community so special,” said Mayor Hubbard.

Their menu is take-out only, and includes a broad assortment of vegetarian and meat curries, biryanis (mixed rice dish), and tandoori kabobs. Traditional breads including naan (a leavened Indian flatbread), roti (whole wheat flatbread), and pooris (deep fried bread made from unleavened whole-wheat) are also standard fare.

You’ll also find dishes not commonly found in other Indian restaurants in the area including Indo-Chinese dishes such as Gobi Manchurian Fried Rice and Street Style Chicken Noodles, pulaos (one-pot pilaf), and tiffins (snacks). Some examples of the latter include dosas, South Indian fried crepes made from rice and lentil, as well as idlis, steamed rice and lentil patties served with chutneys and a vegetable stew. They also offer an “Evening Snack” deli bar menu.

If you’re new to Indian cuisine, Abdul recommends a butter chicken or a lunch combo that is mildly seasoned. The restaurant also plans to offer weekend specials on Friday and Saturday along with dinner specials.

Abdul brings significant experience to the business with more than 15 years running a restaurant in his hometown of Chennai, India. Along with his co-owners Venkat Gunturu and Pradeep Janga, they say they are thrilled to be in Chaska.

“What excited me is the friendliness and welcoming people. They are very caring, very supportive,” says Abdul. “Chaska is growing and we would like to grow [with the community]. We would also like to thank the mayor and Nate for being [so] supportive.”
