Try Quick Breads to Quell Hunger Pangs


It’s easy to get into a routine at breakfast time: grab a yogurt, eat a bowl of cereal or scramble some eggs. Looking to add something else to the rotation? Quick breads can be a great option.

Aptly named because they are simple and fast to put together, they typically don’t include yeast (which require a longer rising time). Instead, baking powder or baking soda is often used for leavening to allow the bread to rise during baking.

Quick breads can be also be nutritious. The options included here include fruit; other recipes may use whole wheat flour, flax seed or other ingredients to amp up the nutrient factor.

Grab some ingredients and a baking pan. It won’t take long, and you’ll have a tasty breakfast or snack item.

Cinnamon Rhubarb Bread

Cinnamon rhubarb bread (a delicious combination)
  • 1 and 1/3 cups sugar, divided
  • 2 tsp cinnamon
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 1/3 cup oil
  • 1 cup diced rhubarb

Mix 1/3 cup sugar and cinnamon together in a small bowl. Set aside. Whisk remaining sugar, flour, baking powder and salt together. In a separate bowl, mix egg, milk and oil. Mix liquid and dry ingredients together until just moistened. Fold in rhubarb.

Pour half of the batter in a greased loaf pan. Add half of the cinnamon/sugar mix. Repeat with remaining batter and cinnamon/sugar. Bake at 350 degrees for approximately 50 minutes (until a toothpick inserted in the center comes out clean). Cool for five to 10 minutes before removing from the pan.

Banana Bread

Banana bread (just as good as Mom makes!)
  • 1 and 1/2 cups flour
  • 1 and 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 2 eggs
  • 1 cup mashed banana (2 or 3 bananas)
  • 3/4 cup sugar
  • 1/4 cup oil
  • 1/2 cup chopped walnuts or pecans (optional)

Whisk together first six ingredients. In a separate bowl, stir remaining ingredients together. Add dry ingredients and mix just until moistened. Fold in nuts, if desired. Pour into a greased loaf pan and bake at 350 degrees for 45-50 minutes (until a toothpick inserted in the center comes out clean). Cool for 10 minutes before removing from the pan.
